Not to throw shade, but fresh produce hogs the mid-season spotlight. We get it. Who could look away from the glistening stack of melons from Green's Pleasant Springs Orchard or those enormous opo squash from Shoua Vang?
We're not saying produce doesn't deserve the accolades, but what about the other players out there giving the mid-season the full encompassing market performance that brings us back week after week? For example, the new Sweet-Hot Chipotle Sauce from Dreamfarm is a real show stopper, giving us depth and excitement all in one. Cantaloupe may revel in its time on stage, but where would it be without the consistent performance of the oft unsung supporting role of cottage cheese from Murphy Farms? The sourdough miche loaf from Madison Sourdough Company may get pigeonholed as a character actor on the market stage. Sure, it's large and it makes you smile, but it's also incredibly delicious and there for every scene where tasty sourdough is needed. We love our stars, our fresh Door County peaches, our heirloom tomatoes and our Listada di Gandia eggplants. Yet, the market theatre is brought to life by so much more and in the height of the market season, it's important not to overlook the other players. While we'd never say no to a slice of fresh melon, we're giving you two great melon recipes to tinker around with this week. Enjoy!
Spicy Watermelon Salad
(From Padma Lakshmi & Better Homes and Gardens) Ingredients: - 4 cups watermelon cut into 1-inch cubes - 2 cups cucumber, peeled, seeded, and cut into 1/2-inch crescents - 2 serrano chiles, thinly sliced* - 2 tablespoons extra-virgin olive oil - 1 tablespoon yuzu juice or fresh lime juice - 1 tablespoon balsamic vinegar - 1 teaspoon lime zest - Salt and pepper to taste - 1/2 cup crumbled feta cheese - 1/2 cup fresh mint leaves, torn Directions: 1. On a large platter arrange watermelon cubes surrounded by a ring of cucumber slices with curved sides out. Place serrano chiles on cucumber. 2. In a small bowl mix the olive oil, yuzu juice, balsamic vinegar, lime zest, and salt and black pepper to taste with a fork. 3. Drizzle the dressing over mixture on platter. Top with feta and fresh mint just before serving.
Savory Shaved Cantaloupe Salad
(From Claire Saffitz, Bon Appétit, July 2016) Ingredients: - 1/2 medium cantaloupe - Olive oil (for drizzling) - Tarragon leaves and Aleppo-style pepper (for serving) - Flaky sea salt Directions: 1. Remove rind of cantaloupe in a very thin layer with a knife; remove seeds. Cut in half and very thinly slice each piece crosswise on a mandoline or by hand to make ribbons. 2. Arrange cantaloupe on a platter and drizzle with oil. Top with tarragon, Aleppo-style pepper, and sea salt.
